Myself and Dolores had booked a weekend away for the two of us. Childless for the weekend, we made the long journey from County Sligo to County Waterford on a wet Friday just before Halloween. We had booked ourselves into the four star faithlegg house in County Waterford. With a few stopovers along the way, we arrived at Faithlegg house around 5pm. Where County Waterford is known for it's great sunshine, the weekend would be a washout. From Kilkenny onwards, torrential rain and wind greeted us to beautiful Waterford. From Waterford city, it takes another 15 minutes to reach Faithlegg House Hotel. Located within it's own 18 hole golf course, the hotel is centered around a beautiful restored 18th Century mansion. With the rain coming down by the bucket load, we made a dash from the car park towards the hotel entrance where we were welcomed by an ugly, mean and scary looking bunch. Yes, a colourful display of pumpkin heads stared at us when we walked into the cozy lobby while the water was dripping from us. The check in was effortless although the hotel was busy on this particular evening. With the Halloween break just starting, many people had decided to enjoy a stay at Faithlegg. A cozy fire was blazing in lobby which was lit by a crystal chandelier. Our room was on the first floor, plan was to relax for a bit, take a shower and have dinner at the hotel. The room was very comfortable and was equipped with all modern comforts. Heading down towards the dining room, I was getting excited about trying Faithlegg's restaurant, a 2AA rosette holder and member of good food Ireland. The Roseville rooms offer an elegant dining experience in the original house, and we were delighted to get one of the tables located in the large bay window. The menu offered a great variety of food, I decided to go with Meadow Field goat cheese Mille Feuille where Dolores selected the chicken and pork terrine with fig and date puree. Both dishes were beautifully presented and were washed down with a great wine selected from the extensive wine list. As mains, I enjoyed pan fried fillet of hake served with mussel meat served in a smoked samphire and pearl onion sauce where Dolores selected the pan fried Monkfish. Normally, I am not a dessert person , but tonight was a night of spoiling, so i selected an ice cream and sorbet selection where Dolores had a selection of desserts. After a fabulous meal, we headed into the bar where we enjoyed another glass of wine before we retreated to our room. After a great nightrest, we woke up to guess what, another windy and wet morning.
But we didn't care, we had the right gear with us and were excited to take a trip along the Copper coast. Breakfast at Faithlegg is another great food experience. First of all, all food is served to the table... You receive a three tier serving tray with smoothies, small scones and cakes , bread and jam. Further , you can order a huge selection ranging from fruit to egg benedict, the latter which was enjoyed immensely by ourselves.
